My husband went to Universal Studios for a work retreat a few weeks ago, and he brought me home the most DELICIOUS red velvet popcorn.

I obviouslyhad to try my hand at making it at-home and I was pleasantly surprised with how easy it came together and how tasty it was.

This would make the perfect Christmas gift for your co-workers or neighbors. I also plan on making it for Valentines day and the Fourth Of July. I love how red goes with so many different season.

How to make Red Velvet Popcorn:

Step 1:Pour 6 cups of popped popcorn into a large bowl.

If you don’t have a popcorn popper, that’s okay. You can also use plain or kettle microwave popcorn.

I have tried this popcorn using microwave butter popcorn and it wasn’t as good. I prefer the kettle, over anything else.

Step 2: In a small bowl, pour white chocolate chips and microwave in 30 second increments stirring in between until smooth.

This will take about one minute and thirty seconds to two minutes.

Step 3: Pour in vegetable oil and mix until combined to make mixture smoother, and easier to pour.

Step 4: Pour half the melted chocolate in a small bowl, and mix in red velvet cake mix until smooth. If the mixture is too thick, try adding a little bit of vegetable oil at a time.

Don’t use too much, or the mixture will be too thin, and the chocolate won’t set up.

If the color comes out a little brownish looking, you could also use a few drops of red food coloring, to get your desired color.

Step 5: Pour over the popcorn and mix so the red velvet mixture evenly covers the popcorn (it may be slightly clumpy, but that is fine).

Step 6: Spread the red velvet covered popcorn out on a piece of parchment paper or aluminum foil.

If you need to transport it out of the way, be sure to think ahead and maybe do this step on a cookie sheet, for easy transportation.

Step 7: Drizzle the remaining half of the white chocolate over the red velvet popcorn.
Wait until hardened, then break into smaller chunks and serve.

Could I make this recipe with other cake mixes?

You most definitely could make this recipe, using other flavors of cake mixes.

I have tried this with funfetti and lemon, and they were both delicious. I think I need to try chocolate next time.

I’ve never met anything chocolate I haven’t liked, so I don’t think I’ll be let down.

Ingredients

  • 6 cup popped popcorn
  • 12 ounces white chocolate chips
  • 2 teaspoons vegetable oil
  • ½ cup red velvet cake mix

Instructions

  • Pour 6 cups of popped popcorn into a large bowl.

    My popcorn did not turn out red! What did I do wrong?

    It doesn't turn a dark red. And you can see from our picture that not every piece is covered with red. Some have the white chocolate coating.

    I had the same prob. I used Duncan Hines red velvet and it was just brown. It doesn’t turn red until there’s liquid mixed with it- so it just kind of looks like milk chocolate popcorn. :/ bummer although it still tastes yummy.

    Mine was a mess. Was I supposed to mix the cake batter first or use dry cake mix? Mine was so thick I couldn't spread it and it was ugly brown.

    You use the cake mix dry.

    What brand cake mix did you use to achieve the red color? Betty Crocker red velvet cake mix with the melted chocolate was light brown.

    I think a lot of it depends on the brand of red velvet cake mix you use! You can always add more food coloring if you want it more "red." The cake mix/chocolate combo is rather thick, but I just try to spread it as much as possible. If you don't think you can work with it, you can add a little more vegetable oil (don't add too much or it won't set up).

    Use the dry cake mix! The color will depend on the cake mix you use. If you want it more red, you can always add food coloring!

    I wanted to love this recipe, so disappointed. Don’t waste your time or money making this recipe it doesn’t turn out right at all! First off 6 cups of popcorn to 12 ounces of chocolate that doesn’t even make sense, that’s barely any popcorn. It went in the garbage. Sorry my kids were bummed.
